This dry white is made from Solaris, a local grape resistant to the cooler climate there. Medium-bodied, with racy acidity and stone fruit and citrus aromas, pair this with the classic moules-frites.

What comes to mind when you think of Belgium? Beer, chocolate, and waffles of course! But part of Belgium’s charm is its under appreciated yet flourishing wine industry. Bioul Castle, known locally as Chateau de Bioul, is an ancient estate located in southern Belgium (Wallonia) dating back 1000 years. Wine has been produced on this land since the Middle Ages, but it wasn't until much more recently (1975 to be exact) that a modern hybrid grape called Solaris was born. Its resistance to the severe cold of the local climate gives it an edge over other varietals that would freeze and die. I’ve learned when you take chances in the most extreme climates, magic can occur. With its combination of freshness, minerality, and juicy apricot and passion fruit flavors, this wine is a true delight that opened my eyes (and taste buds) to Belgium!
