Senkin takes a very localized and hands off approach to making sake, and the 11th generation brothers who now run this kura use only rice grown within a close radius of the brewery. Made from Yamadanishiki rice, this is small batch brewed, unfiltered, undiluted, unpasturized, and aged for one year in bottle before release. A singular nigori, this full-bodied sake will pair well with scallop aguachile.
