Mezcalosfera Bicuixe Mezcal

Felipe de Jesus Cortés grew up in the Mezcal community of rural Miahuatlán alongside his father and brother. He spent his formative years working for Mezcaloteca, the famous bar in Oaxaca City that is renowned for their educational tastings. Taking over the reins as Master Distiller at the age of 22, Felipe is creating Agave spirits far beyond his years In this expression of the Agave varietal Bicuixe, the agave are cooked using mezquite and encino woods, milled with tahona, and double distilled in a copper refrescadera still. Primary flavors of Jalapeno, lime and mango skins prevail. Signature to my experiences with Bicuixe is a tantalizing light cream or whipped cheese note. The sip is long and remains rich in notes of herbs and cedar wood.
