Originally from the Canary Islands, Eduardo moved to Sicily to further pursue the winemaking he had started on his home islands. Working on Mount Etna, he farms several plots on different sides of the volcano. This dry white from the eastern side is composed of mostly Carricante with a few local white grapes mixed in. The wine spends 2 days on the skins to give texture and aromatics. Pair with spaghetti and sea urchin.
