A blend of mostly red and a few white grapes grown on a special high altitude parcel enclosed by stone walls. These vines are ungrafted and up to 100 years-old. Composed mostly of Nerello Mascalese and Grenache, with Grecanico, Carricante, and Coda di Volpe. Aged for 10 months in concrete, this is a vibrant and mineral dry red. Pair with Sicilian couscous.

If you're looking for a case study in volcanic minerality, the Quota N bottling from Eduardo Torres Acosta is Exhibit A. Originally from Tenerife in the Canary Islands, volcanic terroir is in Acosta’s DNA and it was only a matter of time before he became obsessed with the magic of Etna. The “Quota N” vineyard, an ancient walled parcel of mixed ungrafted varietals (80-100 years old) on the north face of Mt. Etna, has an altitude of 1070 meters, exceeding the limits of the DOC! To retain nature’s purity, Acosta farms organically, uses native yeasts in cement during fermentation, and adds just a touch of sulfur at bottling. The vibrant freshness is abundantly clear in this prized bottling, and the blend of Nerello Mascalese, Grenache, and mixed white varietals such as Grecanico, Carriciante, and Coda di Volpe combine to create perfection.
