Heiwa Shuzo Brewery was fully established in 1957 in a very old temple in Wakayama. Here there is an ample amount of soft spring water called Koyasan Nansui, which translates into the texture of their saké. This water is so prized that its source is actually a World Heritage Site. “KID” is a nod to the greater region of “kisshu,” and “fudo” (meaning environment). This saké falls right at medium bodied with a subtle fruitiness. It’s the perfect pairing for a cheese plate or umami-forward seafood, however, it’s very enjoyable on its own.
