Established in 1830 in the city of Okazaki where some of the softest waters exist alongside one of the few female brew masters (Toji), Shikomi Mizu. The yuzu fruit comes from their local farm and is made with a junmai saké base. Gently sweet.

Sweltering summer days call for some cooling relief packages, such as this miniature yuzu saké flask from Shibata Shuzo. Based in the heart of the Aichi prefecture, Shibata uses water from the mountains that cascade behind the brewery. The water is incredibly lithe, which leads to a delicately brewed saké to serve as the base for this 200 ml citrus-driven alcoholic beverage. As with all yuzu sakés, there is some perceptible sweetness, but this one comes with a great lip-smacking acidity and a drier base saké that it tones everything out into a neatly packaged, on-the-go pick-me-up for the days when temperatures are too high.




Situated near the center of the Japanese main island of Honshu, the Aichi Prefecture faces the Ise and Mikawa Bays to the south and borders Shizuoka to the east, Nagano to the northeast, Gifu to the north, and Mie to the west. The region enjoys a mild climate and is home to many top saké breweries.
