A spirit that embodies everything that is exceptional about the artisan distilling traditions of Oaxaca, but in this case applied to rum. Made from the local Java cane, harvested thousands of feet above sea level in the mountains by hand, and distilled in direct fire pot stills. Fermented naturally in open air local pine vats and aged in richly toasted new French oak for 9 months prior to moving to open-air glass demi-johns for an additional 8 months of resting. A profound spirit in every sense of the word. Very limited.
