This dry, unfortified, skin-contact white from Marsala is made in a historic perpetuo style, which predates the arrival of the English. Grillo from Contrada Comuna and Contrada Abbadessa planted in 1977 see 24 hours of maceration. Fermented and aged in chestnut casks, topped up for 2 years, then left exposed to oxygen for 2 years. From a single vintage, this is a rare and special wine. Pair with chestnut pasta and mushrooms.
