Mantensei Kinoko Junmai Ginjo

Mantensei Kinoko Junmai Ginjo is perfect if you, like myself, tend to enjoy savory flavors in sake (or wine) as opposed to fruity. Mantensei focuses on elegant umami sake that can be enjoyed warm, room temperature, or chilled. Their local tamasakae rice is polished to 50% (even though it is not a Daiginjo sake) to create a balance of rich umami flavor and smooth drinkability. Brewery President Kuramoto Touda-san is a mushroom lover and self-proclaimed 'fungi investigator,' and this bottle is the perfect compliment to all things umami. Kinoko, which translates to mushroom, is earthy and savory, with notes of dried herbs, saline, and of course, mushroom! Do I even need to mention what to pair it with?
