Winemaker Gia Togonidze is a professional artist, and this practice extends to his winemaking. The winery in Shaluari is adjacent to the Satlianiskhevi River. This dry, skin-contact white is made from the indigenous Kisi, with medium-tannic structure and aromas of stone fruits and herbs. Pair with a Pkhali spread.

Wine made from organically or biodynamically grown grapes with minimal intervention avoiding the use of chemicals, additives and technology.

Orange Wine (Skin Contact)

Orange wine is made by using white wine grapes, which are pressed and left in contact with the skins, seeds, and stems for an extended period of time, similar to how red wine is made.

This prolonged maceration extracts color, tannins, and phenols, giving the wine a darker, sometimes orange color. It also produces a wine with more structure and intense flavor.

Maceration times can vary between a few hours to many months, with longer contact giving more color and extraction.

Does life imitate art or the other way around? For Gia Togonidze, a former professional artist who pivoted his practice from the studio to the cellar, the answer is less important than the process. Togonidze’s Winery, located in the mountainous Kakheti of Georgia where wine was “born” around 6,500 BC, is a throwback to the way wine was made before the Soviets, the Ottomans, and the Persians. Togonidze cultivates indigenous varieties on his small estate and ages his wine in qvevri, egg-shaped clay vessels that are buried underground. His Kisi (blended with Rkatseteli) is a classic expression of the ancient variety: extended skin contact gives the wine a golden hue while the qvevri aging helps retain the vibrant aromatics, with notes of apricot, ripe citrus, and honey, and a touch of black tea. Pair with with meat, cheese, and debates.
