Chichibu Astor Select Ichiro's Malt Year of the Horse Single Cask Japanese Single Malt Whisky - 2016

After the success of our single cask release from last year, we really wanted to up the anty with our collaboration for this year and we think we've done that with this whisky. Aged for a full 8 years plus, with the first 3 in ex-first fill bourbon to set the foundations followed by 5 years and then some in a fresh Cabernet Sauvignon Wine Cask from none other than Silver Oak Winery. Already one of the oldest Chichibu whiskies released to date the long maturation in this special wine cask has imparted a completely special profile on the malt. The malt itself is completely non-peated to let the wine cask influence shine even further and was made by the same strict artisan standards as the rest of the this range from Chichibu - fermented in open air Mizunara Japanese Oak washbacks, distilled in custom built small copper pot stills and qualitative assessed to taste by their master tasters exclusively - not by computers. The near decade of maturation with the majority being in the premium red wine cask has clearly marked this whisky with vibrant notes of raspberry, dried pineapple, red apple, cocoa, white pepper and crackling spices. Bottled in a custom one of a kind Year of the Horse design. Cask #13348 total yield of 231 bottles.
