This dry white comes from a vineyard planted in 1979. The grapes were foot-stomped, and the wine spent 4 days on the skins. Fermented and aged in neutral oak barrels, this is racy, off-dry, and umami, hence its name. Pair with fish sauce caramel chicken wings.

Wine made from organically or biodynamically grown grapes with minimal intervention avoiding the use of chemicals, additives and technology.

Orange Wine (Skin Contact)

Orange wine is made by using white wine grapes, which are pressed and left in contact with the skins, seeds, and stems for an extended period of time, similar to how red wine is made.

This prolonged maceration extracts color, tannins, and phenols, giving the wine a darker, sometimes orange color. It also produces a wine with more structure and intense flavor.

Maceration times can vary between a few hours to many months, with longer contact giving more color and extraction.


Staff Pick Notes

An unusual Riesling that shows the most interesting and original side of Oregon. The name is curious, but in the glass it is a serious, precise, and surprisingly elegant wine. It is an off-dry Riesling, with a light sweetness that is perfectly balanced by lively acidity. The aromas mix ripe apple, pear, peach, and citrus peel with notes of honey, wet stone, and light hints of mushroom and forest floor, with a savory (umami) touch that fits the name of the label. On the palate it is fresh, tense, and mineral, with bright acidity that gives energy and a long finish. It is not a classic Riesling and not a wine for everyone: it needs curiosity and attention, but it gives a lot in return. A white wine with character, original but not extreme, able to stand out among more predictable wines.
