Starlight Distillery Orchard Blossom Rye Whiskey

This small batch cask finished rye is a blend of two mashbills, one 80% rye and 20% malted barley, the second 90% rye and 10% malted barley. All barley is locally sourced, and the sweet mash is fermented in stainless steel for 7 days. Twice distilled in a Vendome brass and coppet pot still, this aged for a minimum of 4 years. Finished for up to 8 months in refill peach whiskey barrels, barrels previously containing honey, and Jamaican rum casks from the great Hampden Rum Distillery. Bottled at cask strength. One of the most exciting flavor profiles we've seen in an American Whiskey for some time.
