Tart, dry, funky with ripe apple flavors and crisp and slightly saline finish. A great pairing with fish and cured cheeses. Alternatively, Barrika can provide an interesting contrast to heavier foods such as burgers and, as it is frequently enjoyed in Basque Country, with steak.

Bring on da noise, bring on da funk. Basque cider is unlike any other in the world - somehow mouth puckeringly tart, intensely dry, and fantastically refreshing all at the same time. It's unfiltered and while not sparkling, there is a natural zing that brings on the feeling of petillance. These unique ciders should be poured from a great height and should froth and splash into the glass. Don't fret if some of your precious cider ends up on the table, even the most skilled pourers (escanciadors) in San Sebastian spill a little. Barrika is a treat as an aperitif or with light seafood, but can also stand up to heavier dishes, it's tartness acting as a foil to rich meats and sauces. Topa!
