Alvear, Fino - Capataz Solera de la Casa

Alvear, Fino - Capataz Solera de la Casa

Item # 43001 750mL

The Alvear estate is in the unusual predicament of making Fino however they lay outside of the Sherry Triangle and reside just outside in the area known as Montilla. As the oldest producer of the area, they have a keen handle on all their wines which are made of the Pedro Ximénez grape. Fragrant, aged under flor for over 6 years and a special bottling for the Alvear family that's more like an aged Fino that's on the borderline of being a young Amontillado.

Spain

Central to the Spanish winemaking philosophy is the belief that wine should be released only when it is ready to be consumed, and not a moment before. Spanish wine law focuses squarely on this issue: the terms Crianza, Reserva and Gran Reserva are highly regulated indicators of the amount of time a wine has aged prior to its release. In Rioja, Navarra, and the Ribera del Duero (which have the most stringent requirements) red Crianzas must be aged a minimum of two years; Reservas, at least three...

Fino

Fino Sherries are the driest and most delicate of the lot. Here, the flor is at its thickest and most protective. This style of Sherry is light and refreshing - it spends an average of only three to five years in the solera. It should absolutely be consumed while young, within at most a year after its release. Fino Sherry works fantastically as an aperitif, as it pairs particularly well with almonds, olives, oysters, or any other light (and preferably salty) pre-dinner fare. It should be served...

Pedro Ximenez

Also known as PX (thankfully to those of us who have a dislike of words that begin with x’s), this dessert-style fortified wine is made entirely from the highly-sugared Pedro Ximénez grapes. Solera

The real magic in the production of Sherry happens in what's called the solera system - an innovative method of fractional blending in which younger wine is blended with older wine to ensure a consistent product from year to year. The younger wine serves to refresh and awaken the older wine, while the older wine enhances the depth and quality of the younger wine. Thus, with the exception of a handful of single barrels pulled from the solera, there really is no "vintage Sherry": any date...
