Bottled before primary fermentation is finished resulting in a lower pressure sparkling wine, or pétillant. Dry and aromatic on the palate and a delight with fried chicken as the acidity and aromatics work well with the richness of the dish.

Domaine Huet is considered one of the hallmark producers of Chenin Blanc in the Loire, owning three of the most iconic vineyards in Vouvray: La Haut-Lieu, Le Mont, and Clos du Bourg. The nature of each vintage dictates which grapes will become Sec, Demi-Sec, and Moelleux, while they also hold back stocks of older vintages for later release. Beyond these and their single-vineyard bottlings, they also make a superb sparkling using grapes from these three vineyards and some smaller plots. This sparkler is a beauty: aromas of pineapple chunks, honeysuckle, and chamomile tea just waver in the glass. There is a thick, intense richness to the mousse complemented by just the right amount of dosage accentuating the wine’s tropical fruit and floral notes and its cool mineral backbone. A glistening alternative to Champagne!
