Pet Nat! 60% Chenin blanc!! 40% Pineau d'Aunis! Vines around 115 years of age!!! This beautiful sparkling wine is full of aromatics of honey, vanilla, and a touch of pepper. Renaud Guettier ferments this wine in fiberglass tanks for 30 days, then transfers the wine to bottles where they continue fermenting and aging for one year with no dosage of any sort. The result is a naturally carbonated wine with some earthy savory notes on top of all the honey, vanilla and spice. He plows his vineyards with a horse, and all of his practices are organic. For a celebration or for a Monday evening, this drinks very well all on its own, and pairs with a variety of foods from cheese to shellfish. Pop the bottle cap and enjoy.
