Some grapes are overshadowed by the more famous varieties found in their respective regions. Aligoté has historically been the unloved stepchild, banished to the basement of Burgundy to scrub and clean while Chardonnay gets to be the circuit queen. This is totally unfair because Aligoté has so much to offer. The world famous white wine-making techniques employed in Burgundy are usually lightly employed in many Aligotés. Domaine Rollin's exemplary bottling sees the wine aging on the lees over the winter, during which malolactic fermentation naturally takes place. It is bottled in spring and can boast of a lovely freshness with subtle fruit, floral, and dairy notes. This is a lovely bottle for almost any occasion, but makes for an indulgent weeknight wine with a simple dinner.

Aligoté

Older Aligoté vines have been known to produce wines of high quality, displaying lovely citrusy and at times nutty characteristics - but even so, the remaining plantings of the grape are fast being uprooted to make even more space for the cultivation of Chardonnay.
