The Astor cocktail is an unsung classic cocktail that I did not know about until very recently. This past weekend I was determined to concoct one, and with gin, Swedish Punsch, lemon and orange juices, it was perfect for some blazing Saturday afternoon sipping. Batavia Arrack, a distilled spirit made from sugar cane and fermented red rice. It has a unique, potent funk. It has a great many applications in the modern Tiki canon. It is also very commonly used to make traditional Swedish Punsch! Made from Batavia Arrack, aged rum, lemons, sugar, green cardamom and cloves, it is also the traditional accompaniment to the classic Thursday meal of yellow split pea soup. Chilled in summer, warmed in winter, this Punsch (Punssi in Finnish) knows no bounds!
