If you’re a dry-hard fan of pas dosé bubbles, This méthod traditionelle Chenin Blanc from Montlouis is not one to play games. My team members here at Astor recommended not to drink this liquid gold on its own, instead pair with something fatty or oily. That made sense as this wine has bold acidity, though I still enjoyed a solo sip. I'm a lover, not a fighter. Its vines are grown in limestone, only to be overlaid in chalk and a combination of flint. If you want a pairing sent from heaven, teach your friends a serious lesson in indulgence by adding a half teaspoon of Sauternes to homemade whipped chicken liver mousse for a touch of sweetness dolloped upon petit crostini, alongside a pint of farmer's market cherries for color. Keep it real. You’ll have to stall as your taste buds catch up to you and send their thanks.
