While granite soil is not typical of Muscadet, winemaker Marc Olivier has plenty of this great soil on his hands. This is a Muscadet from granite soils that's made with wild yeasts and then aged on the lees for 24 months. Firm minerals, subtle fruits and clearly a wine that can be held for years to come.

When I first stepped foot into art school, my professors told me "Forget everything you know." Translation: it's time to re-learn what you may constitute as a known fixture and draw conclusions based on your own perspective. My storied impression of Muscadet is... Hamptons, Oysters, Sushi, etc. Though, when I tasted this Muscadet developed by Loire Valley winemaker Gwenaëlle Croix, I had other ideas.This Muscadet comes from rich granitic soils and wild yeasts, and then aged on the lees for 2 full years. You'll find tight minerals, but mostly a notably sophisticated subtlety in ripe fruit which doesn't necessarily reflect sweetness. "Clisson" is all about texture and mouthfeel. Think of more textured foods to play with such as Beef Tongue sashimi and Roasted cauliflower basted generously in Moutarde de Bourgogne for pairing.
