Mauro Vergano spent many years making limited amounts of Chinati as a passion to give to like-minded friends while he kept his day job. A trained chemist and enologist, he first learned to make Chinati from a pharmacist relative. A few years ago, he decided to give more time to his passion and create these unique and delicious homebrew tonics.

Staff Pick Notes

The type of liqueur we call Chinato is almost exclusively associated with Barolo. The regal red of Piedmont is combined with a neutral spirit, or occasionally brandy, macerated with fruits, botanicals and spices and a bit of sugar for balance. But I suppose that Mauro Vergano, a chemist by trade who specialized in fragrances and flavors, was predisposed to experimentation. His one of a kind Chinato uses Moscato as a base, and opts for vanilla, cinnamon and citrus zest among others in his recipe. Bursting with white flowers, tropical fruits and spice, this is a spirit that you won't soon forget, ideal for sipping with Christmas cookies and holiday fruit cake by the fireplace. .
