After fermentation this wine was aged in barrels for two years before bottling. With a few years of age now, you'll find a nice evolution on the palate with nuts, stone fruit and a dry, mineraled finish. A structured Chenin Blanc that can age for many more years to come. Domaine Aux Moines is a 12 ha estate with vines planted in the famed Roche Aux Moines vineyard which has had grapevines planted since the 12th century.

Having had several opportunities to drink Coulee de Serrant, the famed monopole in Savennieres tended to by Nicolas Joly, Domaine aux Moines is an excellent producer that deserves equal recognition, Pascaline Lepeltier would agree. Tessa Laroche is the current vigneron at the domaine, taking in her mother's footsteps of natural production through their vineyard work and cellar practices. With 12 hectares to the estate's name, Laroche does all work by hand, vinifying using old cask and stainless steel tank with all indigenous yeasts implemented for fermentation. A dry, flinty expression of Chenin Blanc (schist soils), this wine has a warmth in its fruit expression and richness that is just all around delicious, notes of chamomile, beeswax, dried pineapple, and golden delicious apples. Look out for library releases too!
