The Tete de C uvee from a respected family run house in business since 1930. Harvesting by hand is the only way to work, and the Pinot Noir and Meunier come frome vineyards in the Premier and Grands Crus villages of Ludes and Mailly Champagne. Only first press juice, and unfiltered wines go into this cuvee, The first 6 months take place in large cask, then is transferred to barriques, which produces very fine bubbles, due to the long fermentation. As secondary fermentation occurs, the wines are matured nost to punt, allowing a great ageing capacity, while preventing excessive richness, from extended lees contact. Spends 10 years in the cellar before release. Keeping the vintage's unique characteristic is the primary goal. A decidedly complex Champagne, with smoke on the nose and palate.
