Wine made from grapes grown without synthetic pesticides, fertilizers and herbicides in the vineyard.
The Viviani family has 10 ha of vines in Mazzano in the historic Valpolicella Classico zone. The vineyards are planted at 400 meters which enables ideal conditions for the cultivation of vines - well-ventilated with low humidity. After harvest, the grapes are allowed to wither and concentrate in small baskets in a fruttai - a small room that enables this process. Fermentation is done weeks afterwards with ambient yeasts. After, the wine settles in varying sizes of old oak casks.
The red Corvina grape (a.k.a. Corvina Veronese) is the most widely planted grape in Italy's Valpolicella and Bardolino regions. In recent years, it has gained momentum as the best grape for making Amarone.
This is a very large region that produces all sorts of red wines, often from the Corvina grape, that range from light, early-drinking, Beaujolais-esque efforts to hulking dried-grape monsters like Recioto and Amarone.
