As one of the original producers of this historic libation, the Cappellano Barolo Chinato stands second to none. The chinato is at a wonderful stage right now, retaining plenty of grip but softening up around the edges with a lovely concentration of dried flowers, raw chocolate, preserved cherries, white pepper, and bitter herbs. This current release uses the 2012 vintage Barolo as a base and was bottled in 2017 and the nearly 15 years of aging of the Barolo and nearly 10 years after the bottling this cellar release is bursting with flavors you won't find anywhere else. Very limited supplies.

Staff Pick Notes

Barolo Chinato was first crafted in the late 1800s in Serralunga d'Alba and the originator of style Dr. Giuseppe Cappellano, a pharmacist and winery owner. The production involves macerating Cinchona Calisaya bark, rhubarb root, cardamom, and other local botanicals in neutral grape spirit, then blending with a 100% Nebbiolo wine, specifically Barolo DOCG. The final blend is aged for approximately one year in oak to integrate flavors. Fig and date fruit prevail and linger on the pallet as a fine tannin grips the cheeks. The wine component is as refined as one could ask of Cappellano Barolo. The spice profile is dusty and rustic. Clove, cinnamon and star anise spice. This is a quintessential digestivo to share with friends and family alike.
