After over a decade of impassioned research and experimentation Vittorio Capovilla was granted license as a distiller in 1988. Since then, he has built himself a reputation as one of Italy's greatest craft producers. For this extraordinary grappa he partnered with natural wine demi-god Josko Gravner and distilled the 2011 vintage of his famed Ribolla Gialla. After resting for years, the select cuts of the spirit were bottled in very limited quantities. The profile is incredibly floral and thoroughly infused with the dewy freshness of spring. The garden and forest scents are as intoxicating as any great perfume, while the palate is juicy and lively with lavender, powdered sugar, chamomile, roses, melon, dragonfruit, and cleansing acidity.

This is the most complex and beautiful grappa I have ever tasted. Vittorio Capovilla, an artisan in the true sense, turned his experience and engineering bent of mind as a racecar mechanic into the fruitful passion project of slow, small-scall alembic distillation. He works with a wide variety of raw materials of the highest quality from around the world-- you will also see his handiwork on our rum shelf, for instance-- including that most Italian of raw material, winemaking leftovers. In this case the leftovers are from ribolla grapes harvested by Friulian orange-wine producer Josko Gravner, and the resulting spirit retains the inevitable earthy woodsiness of grappa but is incredibly delicate, aromatic, complex and persistent. Truly excellent.
