Perhaps the most popular release i the regular portfolio, this batch is aged in a combination of French and American Oak Casks. The youngest whisky in this current batch is eleven years old, an astounding age for a Tassie malt.

There's a reason you don't see a lot of Tasmanian whiskey on the shelves: it was outlawed for 150 years! Not until 1992 was the law overturned, so the industry has a had a lot of ground to make up. Patrick Maguire at Sullivan's Cove, a proud descendant of convicts on both sides, has been on the forefront of showing how great Tassie whiskey can be. He uses local Tasmanian barley, which has a high fat and protein content, and ferments with a unique strain of yeast developed specifically for them. The Double Cask spends 11 years in a combination of ex-bourbon barrels and ex-tawny French oak casks. What stands out in all of the bottlings, but in particular the Double Cask, is the texture. Soft, and creamy, it is the essence of the Tasmanian barley. Vanilla, butterscotch, clove & candied ginger segue to milk chocolate and walnuts.
