As any diehard music fan knows, there’s beauty in B-side. In the case of legendary producer Daniel Etienne-Dafaix, his Bourgogne Rouge B-side is a must for any serious Burgundy fan. Etienne-Dafaix, whose family has been making wine in Chablis since the 17th century, has made a name for himself with his extraordinary white wines, which are organically farmed and aged for long periods (8 years for cru-level cuvees!) after spontaneous fermentation. But few people know about his small selection of lees-aged red wines, which are so bright and fresh that you'll reconsider everything about Burgundy reds. Aromas of ripe cherry, dried mushroom, pomegranate, and crushed granite give way to a palate that’s bright and fresh, with notes of strawberry, red currant, forest floor, and sarsaparilla. Pair with roast chicken or your favorite B-side.
