On my first tour of a saké brewery, I fit some protective coverings over my shoes and soldiered on inside. The brewery, Brooklyn Kura, is similar to what one might find in Japan—and also very different. As the only saké brewery in New York State, they take an ad hoc approach to brewing, fashioning almost all of their equipment themselves. This inventive attitude extends to the fantastic sakés that they are making. We don't often get a chance to taste freshly brewed saké because most of them are shipped from halfway around the world, so this is a true treat. The brewers at Kura are constantly experimenting and the results are both interesting and deeply delicious. Go visit their beautiful, minimalist tap room in Industry City on the weekend to taste something local and very unique.
