Made from the Melon de Bourgogne grape and first bottled in 2007. Les Gras Moutons, the fat sheep, is a lieu-dit made up of 2 vineyard parcels in Monnières-Saint Fiacre. The soil features gneiss--a compressed form of granite that has a very different impact than the granites found in other Pépière sites--as well as amphibolite rocks scattered throughout. The fruit is pressed and then fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees in large vats--9 months in the case of Gras Moutons-- until bottling without fining or filtering.

This Muscadet is truly a standout. Made from 100% Melon de Bourgogne, a classic grape of the Loire Valley, it comes from vineyards rooted in gneiss—compressed granite that contributes to its distinct minerality. Crisp, dry, and vibrant, it opens with fresh aromas of fresh melon, citrus (lemon and lime), green apple, pear, white flowers, and delicate herbs, all underscored by a subtle saline edge. On the palate, it shows bright acidity and a clean, refreshing profile, with fresh fruit flavors layered over a pronounced mineral character—think wet stone. Fermented with native yeasts and aged for several months on the lees (“sur lie”), it gains a gentle creaminess that adds texture and structure without sacrificing its lively freshness.
