Winemaker Michel Loriot blends some of his top parcels to make this magnum of vintage Champagne which is made with Chardonnay and Pinot Meunier. While we love his suggestion of drinking this as an apéritif, we also enjoy it throughout a meal. As with all the Loriot Champagnes, a technique is used of playing music (classical) in the vineyards as well as the cellar to alter the amino acids in the proteins of the grapes. There's a long history of musicians in the family so it's no surprise that music continues to play an integral part at the domain.

Most Champagnes bring to mind opulent parties, crystal glassware, and a live band. This Champagne, despite it's size, was made for a much more casual affair. Made from a majority pinot meunier, it's as fresh and soft as rainwater. In fact, the easy-drinking character of this wine makes it seem quite reasonable to purchase this mag for a party of no more than four. Marie Loriot, whose family makes the Apollonis Champagnes together, says it was made to be shared with "a friendly spirit." You can make new friends with this wine, no doubt. If you don't know your neighbors now, you will know them really well by the time you finish off cuvée. On the other hand, though, I think this wine was really made for close friends sharing a quiet dinner. Throw on a comfy flannel, call your closest BFFs, and enjoy at your leisure.
