A new batch of lightly frizzante mead made with an in house culture. Simply made with fermented honey, this mead is pure, lightly sweet and full of tart acidity along with some funkiness. We are consistently impressed with meads coming out of this new meadery in our own Brooklyn.

Staff Pick Notes

We've never had a batch of Enlightenment Wines come in to the store where I didn't feel compelled to staff pick every one. Raise the Roof is the one to try if you have ever enjoyed sour beer or natural wine, particularly in the pet-nat style. While many of their honey wines are cofermentations of foraged ingredients or rooftop herbs, this is pure New York apple blossom honey, fermented dry in barrel with wild yeast. Bottled on the lees, no sulfur added. Tart, wonderfully complex, and floral, it has real texture for a sparkler and is pretty amazing for any kind of starchy, cheesy or fried foods. Having had the privilege of tasting some bottles that have been bottle-aged with the producers, I can tell you that all of their meads continue to develop in really gorgeous ways with anywhere from a few months to a couple of years of bottle age.
