Talk to a Burgundy expert or importer and you’ll be surprised how they discuss the region’s wines. While you may think they want to drone on about Pinot Noir’s depth or transparency (and they can), they often end up talking about texture. They’ll compare Pinot to a type of fabric, like wool, linen, rough silk, fine silk, velvet, etc. Texture is the X-factor that has drawn me to Phillipe Collotte’s Fixin. This lesser known sub-region of Burgundy offers reds that are fresh and satisfying. Collotte’s wines are concentrated and unfiltered. The result is a red with a fine, velvety texture that satisfies in a way flavor alone cannot. Go to a fabric store, buy a few squares of different materials, pop this bottle and see what I’m talking about.
