Flor Del Desierto Sierra Sotol

Item # 40469 750mL

Made from 100% wild Desert Spoon succulents that grew for a minimum of 18-22 years prior to manual harvest. The plants were then broken down by hand and cow stomping before being wild fermented in open-air oak vats. Twice distilled in clay pot stills the spirit has retained its wild and natural character with notes of forest floor, Maine woods, cracked pepper, fresh herbs, pine needles, wet sand and bright citrus. Reminiscent a great new wave retsina in the most beautiful, invigorating sense.

Staff Pick Notes

Wow! The way this spirit encapsulates the flavors of the untamed wilderness is unparalleled. Immediately upon arrival in your glass, you are absorbed into something new and yet seemingly familiar, like a haunting perfume bringing back memories that have been locked away. Imagine a pile of freshly ground mulch from a pine forest sitting in your driveway on a cool summer morning. It has been baking in the hot sun for days. Now take a pitch fork and dig into it. A full aroma immediately fills your senses, and as the steam escapes, the aroma captures your full attention. It is vibrant and powerful, and only these wild harvested desert spoons of at least 18 years of age can bring this sort of flavor. The entire forest is in your glass.

When it does grow, it protects the wine from oxidation while feasting on the available glycerin - the resultant Sherries are thus dry and very pale in color (called Finos or Manzanillas).
