A lean, mineral-driven style of Chardonnay that is excellent for oysters. The grapes are handpicked and whole bunch pressed, fermented in old oak barrels with extended time on yeast lees and no malolactic fermentation. Saline and citrus flavors with a clean, refreshing finish. The vineyards are located in the Waipara valley and the fertile soils are full of marine fossils.
