Pinot Noir has been cultivated on the hills of Lipoglav, Lower Styria since the French monks planted them in the 12th century. The grapes of this wine were hand-harvested then destemmed and spontaneously fermented in open top fermenters. After a 3 week maceration on the skins, the wine aged for 12 months in old French oak barrels. Bottled unfiltered.

Staff Pick Notes

Sanctum is the estate of Marko Podkubovšek. Following the Slovenian independence movement in the early 1990s Marko brough back to life this historical 12th-century vineyard site, originally planted by French Carthusian monks. The estate manages 7 hectares of vineyards using dry-farming techniques, completely excluding the use of irrigation or synthetic herbicides. Lisica translates to "fox" In Slovenian, specifically a female fox, or vixen. This beautiful, natural and vibrant expression of the Pinot Noir grape is prominent in fruit notes of dried cherries and pomegranate. Naturally fermented in the cellars over a period of nearly two weeks, there is a dusty, rustic quality I simply adore.
