The Fonseca family, legendary cultivators of the Highlands of Jalisco and experts on agave farming for over a century have also become some of the most respected Tequila distillers in the world in the recent past. Don Fulano is made with 100% estate grown, hand selected and harvested agaves. Distillation utilizes a custom approach with a majority coming from a copper pot still and a small percentage from a unique double column distillate. The blanco is everything you want a great tequila to be - pure and invigorating with notes that reminded us of Dragon fruit, sweet herbs, lime blossoms, minerals and white pepper. The texture is round, the alcohol well balanced and the finish mouth-watering. All natural. 100% zero additives.

The Fonseca family have been cultivating agave in the Highlands of Jalisco for over 140 years. In 1985 they had just signed a contract with Tequila Sauza and Jose Cuervo to deliver 20,000 tons of agave every year. But early into the contract, both brands reneged on the contract, leaving Enrique Fonseca with loads of agave and no one to sell to. So in 1990, Enrique acquired the La Tequileña distillery, which had a unique setup combining both alembic stills and a continuous double-column Coffey still. Enrique even took a trip to Scotland & France to learn the art of this multi-still distillation. Today, through the combination of hand selected estate grown agaves, slow cooking, a proprietary natural yeast fermentation, and this unique still setup, a magical liquid is created that is both incredibly smooth and full of agave character.

Blanco

White tequila, an official type (tipo) for tequila bottled fresh from the still, or allowed to rest in stainless steel tanks for up to sixty days before bottling. It is never aged in wooden barrels. Also known as plata, plato, and silver tequila. Usually the most robust, strong-flavoured of the tequila types.
