Distilleries that are explicitly experimental can be frustrating. While there is a kind of artistry involved and boundary pushing is important in any medium, food and wine are made to give pleasure. So you go into every release thinking it will either be a hit or a wild miss. But with Empirical Spirits, every new release feels like pure refinement of their craft. We're able to watch a new category being built. Between a sour beer and a craft cocktail, but not solidly either, this is the third in Empirical's series of cans. It is the best so far. Big citrus from lemon myrtle is the first impression with full, dry flavors of fig coming in, then earthy nuttiness from carob and coffee chaff. Drink it very cold, straight from the can.
