Made from a local clone of Salamino di Santa Croce, this sparkling dry rosé is named for winemaker Gianluca Bergianti's grandfather. The slightly hazy salmon color hides the full on acidic spectrum from citrus to green apple aromas, dried herbs, and a savory, earthy note. Pair with fritto misto or tempura.
