A white wine blend made from separate vineyard plots around the Niagara Escarpment. This truly irreverent wine is from François Morissette, a classically Burgundian-trained winemaker, going off piste in the best of ways. The Chardonnay and Riesling were fermented in foudre. A portion of Gewürztraminer and Riesling were aged on the skins in qvevri for 6 months. This mix of classical and natural position François between these two worlds of winemaking. Pair this gorgeous wine with Tourtière!
