Relying on taste and feeling, they eschew chemical analyses and craft their wines based on their own instincts. Luckily they work with two of the most esteemed vineyards, which have been lauded since Roman times. Expressive both of fruit and the unique terroir on which these vines grow, this off-dry Kabinett is very accessible today. Pair with pork in anchovy sauce, or age for decades.
