This is 100% Pinot Noir, and is made in a solera-style, perpetual reserve. It is named after sessile oak foudre which houses the wine. The fruit comes from a small parcel, called Les Murtets, and the vines are 60-80 years old. Hand-harvested grapes are lightly pressed, just once, and the first press is all that goes into this bottling. High ripeness at picking allows for Delphine to achieve balance with zero dosage. Pair this dry white wine with karaage chicken.
