Tasting Notes

A delectable Champagne made from Chardonnay. The grapes were harvested a touch later, at peak maturity, in order to balance out the intense mineral of the soils which are chalk, sandstone and clay-based. After the primary fermentation, the wine aged for 9 months in barrel before bottling for the second fermentation. The wine aged a further 3 years sur latte before being disgorged.
