This racy and fresh pétillant naturel from Karina and Guillaume Lefèvre is a blend of equal parts Vermentino and Ugni Blanc. The domaine takes its name from the limestone soils that protect the vines from extreme temperatures, and provide excellent drainage. Pair this dry, cider-like sparkling white with fried sardines and lemon thmye aioli.
