Provvido is a wine produced from the Nero d'Avola grape at an altitude of 650 meters. In addition to grapes, olive trees have been planted nearby and organic olive oil is made at the estate. Gaetano Gargano was inspired by the work of Giampero Bea, son of famous Umbrian producer Paolo Bea, and committed to reinvigorating the farming activity at Il Censo. He has his own minimalistic way of making wine: harvest is completely manual, no added yeast, no temperature stabilization, no fining, and no filtering. This wine has flavors of blackberry, black cherry, and licorice. A full-bodied, well-balanced wine full of personality and character. A great example of Sicilian wine!
