Aguila Tahona Blanco Tequila

This special tequila is made at the historic Cascahuín Distillery that has been operated by the same family for generations since its founding in 1904. Dedicated to artisanal, traditional production methods, the estate grown agaves are farmed with organic practices and mature for a minimum of 8yrs to reach peak concentration prior to harvest. The agaves are slow cooked in traditional brick ovens and crushed with a tahona stone made of local volcanic rock. The fermentations are natural and the spirit is double distilled in copper pot stills (a rarity in tequila). Rested for three months prior to bottling the finished Tequila is round, luscious and reaching a level of complexity rarely seen in the Lowlands. A phenomenal tequila.

Tahona

 The traditional, large stone wheel turned by donkeys, oxen or tractors. It pivots in a circular space (often a cement well) to mash the pulp of the agave into a coarse paste and extract the juice (aguamiel). This is diluted with water to give it the necessary consistency for fermentation. Also see molina and noria.

Blanco

White tequila, an official type (tipo) for tequila bottled fresh from the still, or allowed to rest in stainless steel tanks for up to sixty days before bottling. It is never aged in wooden barrels. Also known as plata, plato, and silver tequila. Usually the most robust, strong-flavoured of the tequila types.
