Bourgogne Rouge, Sylvain Pataille - 2023

Founded by Sylvain Pataille in 1999, Domaine Sylvain Pataille started with one hectare of land and has now grown to 15 hectares in total. Having spent time watching his father tend to a family friend’s vines at a young age, Sylvain developed a passion for winemaking that has led him to where he is today. Sylvain’s Bourgogne rouge is sourced from a 1.07 hectare parcel of vines in Marsannay, which were planted in 1956. He uses 30% whole clusters, indigenous yeasts for fermentation, and ages this expression with only 15% new barrels for 12 months. The level of vibrant red fruit flavor on the palate is immense and supported by a refreshing level of acidity that will prime your palate for the next sip. Notes of red cherry, strawberry, raspberry are predominant and supported by notes of violet, which help to keep the wine fresh. A must buy!
