Made entirely from Melon de Bourgogne, the grape more commonly used to make Muscadet, this high elevation vineyard sits on a desert mountainside. Whole clusted pressed into concrete eggs, it spends 6 months on the lees. Pair this fresh medium-bodied dry white with a classic oyster pie.
